Everyone knows that the holidays can get a little bland with the same old, same old on the menu, especially with those turkey leftovers the day or two after the big celebration. Yes, add some heat to your holiday celebrations with this fun little twist on the traditional Tortilla Soup that is popular across many Hispanic cultures. It’s warming and adds some variety to the typical holiday meal that usually involves turkey. Or it makes a good use of turkey leftovers the day after your filling holiday meal. This Turkey soup is bound to enliven your meals for a while to come. You just have to pick up the ingredients and throw them together.
Spicy Turkey Soup
1 chopped medium onion
3 tsp. oregano
3 tbs. chili powder
8 minced garlic cloves
2 tbs. olive oil
½ tsp. black pepper and salt
quarter cup sliced cilantro
1/3 cup tomato paste
4 cans chicken broth or turkey drippings
3 pounds white hominy
1 cup shredded or diced carrots
4 cups water
One pound of shredded turkey leftovers or browned ground turkey
Optional:
Lime wedges squeezed into soup
Tortilla chips or strips
Shredded cheddar
1. Turn on the burner to medium heat and place over it a 5-quart pot. Add to this, the olive oil and let warm. Add the diced medium onion. Stirring often, simmer the onion and oil for two minutes. Make sure not to burn or brown the onions.
2. Mix in the chili powder, oregano, and garlic and tomato paste. Stir the mixture constantly until well combined in a kind of roux. Add to this the water, broth, hominy and carrots. Turn up the heat to high. Let the soup mixture come to a rolling boil.
3. Then, turn down the heat and allow the soup mixture to simmer on the stove. Cover the soup and let it cook for half an hour. Stir occasionally.
4. Stir in the shredded cooked turkey, black pepper and salt. Cook the soup until heated through. This should be about five minutes. Stir in the sliced cilantro. Place on the table with lime wedges, shredded cheddar and warmed tortilla chips or crunchy tortilla strips. These extras can be added to each person’s serving of soup as they desire.
Hmmm…that just sounds delicious reading the recipe. This turkey recipe is very tasty and surprisingly quick to make. It only requires half an hour to simmer and a few minutes to mix together. Most soup recipes require a lot of simmering time, but this one is a broth soup and many of the ingredients are already cooked. So, it’s very easy to whip up the day after a holiday meal when everyone is still feeling a little sluggish. You can bet that chili powder is going to put some pep back in the step of your friends and family.
